Hilarious Read (Mom, this is dedicated to you!)

My friend Kerri had this posted on her blog and I thought it was hilarious! This woman started by posting an auction on ebay for some Pokemon cards the kids snuck into her shopping cart, but she posts this long-winded reason why she hates grocery shopping with her kids and her rantings and ravings for her auction description and unbeknownest to her, she's become a web phenom. Those cards ended up selling for $140+ and she has over 11,000 hits on her blog a day - from obscurity to reaching out to so many over the internet, my hat is off to her.

I am one of five kids, my mom had all five of us in seven years and I distinctly remember those grocery shopping adventures. It never failed that someone in the grocery store would ask my mom the infamous "Are all those kids yours?" question to which my mom would make the snarky reply, "No, I drove around the neighborhood asking 'Who wants to go to the grocery store and drive me crazy?' - of course they are all mine!". Probably the best was when we went to Roses (kind of like a Wal-Mart or Target, back in the 80's) and Cassidie swiped a magnet. Imagine all five kids in tow, Cassidie is a middle child and I think she was about 3 or 4 at the time which would have made my brother about eight and Kayleen would have been about one, walking out of the store as my poor mom makes the discovery. Cassidie is tough as nails (and I mean seriously she could beat me up as a kid and I was not a wimp) and she threw a temper tantrum that should be in another category all by itself. As we were walking out of the store she throws herself down in the parking lot in front of the store kicking and screaming - it's amazing we all lived that day.

I wish my mom had the internet as an outlet back then with us - I can only imagine the things she would have written.

Kudos to you Mom - thanks for letting us live to adulthood :)

3 Weeks





Madeleine is now 3 weeks old, and honestly, I can't tell much difference in her since she was born except that she now as a belly button (it's a innie) and it now looks like both tear ducts are blocked - yuck! She must be getting a little bit bigger because her newborn diapers are getting quite snug, but she's still a little tiny for the size 1's. I was really worried yesterday because I was hosting bunco at my house and normally she likes to be held - all the time - but, she must have known I needed her to be extra good because she was an angel and slept in her bassinet of the pack and play almost all day long. In fact, I had to keep checking to make sure she was still breathing!

For those curious about the adoption process, the 10 day relinquishment period was up last Monday so the court petition was filed last week and we had to do fingerprinting and send off our information for an FBI background check. We also complete a homestudy with the county - should receive word on this any day now. They will come to our home and check that it is fit for a child and interview us to make sure we would be good parents. Once the homestudy and the background check is complete it is a matter of getting the court date scheduled and a matter of formality standing before the judge and having him name us as the new parents. At that time we can then have Madeleine blessed and sealed to us - yea!

Cafe Rio

Andrew and I LOVE Cafe Rio, but unfortunately we don't get to eat there very often because we're in Georgia and it is in Utah! Big bummer, so to satisfy our cravings for this cuisine I did some serious soul searching on the web and came up with some recipes. I tweaked them a little and mind you it's been a while since we've been, but we enjoy the food and we think it tastes pretty darn good! I just made it for my bunco group last night and unless everyone had pinocchio syndrome, it was a hit.

So if you're curious and want to try it out...


Café Rio Pork

2-3 lb pork tenderloin or boneless pork roast
Dr. Pepper, enough to just about cover the pork
3/4 cup sugar1 (7 oz) can Chipotle Chiles in ADOBO sauce (you will just use the adobo sauce unless you want it scorching)
1 heaping tsp each of Dry Ground Mustard and Cumin
1 tsp minced garlic.

It’s easiest if you start with some Dr. Pepper in the crock pot and add all the ingredients except the pork to make sure they are all combined. Add the pork Cook on low for 7-9 hours or until the pork pulls apart with a fork. Shred the pork and let it sit for preferably another hour to soak in more of the juices and serve.


Café Rio Chicken
1 small bottle Kraft Zesty Italian Dressing
1 T chili powder
1 T cumin
3 cloves garlic—minced
5 lbs chicken breast (I use boneless skinless)

Cook all together in a crock pot for 4 hours, shred meat and cook 1 additional hour.


Café Rio Rice

3 c water
4 t chicken bouillon
4 t garlic –minced
½ bunch cilantro finely chopped
1 can green chiles—or equivalent fresh
¾ t salt
1 T butter
½ onion
1 ½ c rice

Add the water, bouillon, garlic, chiles, salt, butter, and onion to the pot bring water to a boil and add the rice, simmer covered 30 minutes. Add the finely chopped cilantro at the end before serving.


Black Beans

1 can black beans, rinsed and drained
1 1/3 cup tomato juice
2 cloves garlic, minced
1 teaspoon ground cumin
2 tablespoons olive oil
1 1/2 teaspoon salt
2 tablespoons fresh chopped cilantro

In a nonstick skillet, cook garlic and cumin in olive oil over medium heat until you can smell it. Add beans, tomato juice, and salt. Continually stir until heated through. Just before serving stir in the cilantro.


Café Rio Dressing

1 ranch dressing packet
1 cup milk
1 cup mayonnaise
3 tomatillos (tomato like vegetable with a husk around them)¼ bunch of cilantro1 clove garlicJuice of 1 lime1 whole jalapeño
2 green onions
Salt to taste

Mix the ranch packet, milk, and mayonnaise in a bowl with a wire whisk until well combined. Add all other ingredients to the blender and add the dressing mixture. Blend well and enjoy!


**Extra**
I use the Cotija cheese and get the dough flour tortillas at Wal-Mart and I use romaine lettuce. You can make the corn strips by preheating the oven to 400 F. Slice corn tortillas into thin strips. Bake for about 8 minutes. Enjoy!

Daddy's Girl

Did I mention that we have a daddy's girl in the house? Holy Moly! I have never seen a guy so in love with a little girl. If I didn't love her so much myself, I might get jealous :)

Andrew always wanted a boy - and I mean ALWAYS! Those that know Andrew know how much he loves carpentry, camping, fishing, auto mechanics, you know big guy things - and he was dying to have a little apprentice. Well along comes Miss Madeleine. Hee hee, now he could not care less to have a boy. He now talks about how much he can't wait to take her hiking (he's looking into which backpack carrier is "the best") and camping (we absolutely HAVE to have a "travel" pack in play (smaller than a regular pack and play) so that it can fit into the tent (this one cracks me up the most!), and he declared the other day how we'll have to get her into rock climbing because of her long toes and how she'd be really good at that. Wow, things have changed at our house!

One BIG Boy!

My nephew Dylan was blessed this past Sunday. My sis Kayleen seems to breed them big - he was 9 lbs 10 oz at birth and now he is almost 17 lbs at only 3 months old! Right now he is wearing 6-9 mo clothes. Andrew said that during the blessing he was squirming so much he thought he was going to jump out of their arms!

It was fun to all be together and spend some time with my BIL, Isaac's family. We ate until we were absolutely stuffed! We must have started to get slap happy on food 'cause we started dressing up the lil' ones all crazy. We were laughing so hard it hurt!

Happy Birthday - 1 Week Today!

Today for Madeleine's 1 week birthday; we celebrated by visiting the pediatrician! It went really well and Madeleine was a champ. She's now 8 lbs 6 oz - I swore to the doctor that I wasn't overfeeding her, she's in the 75th percentile for her weight and she is still 20 inches long. The doctor said she was "perfect" and I said we already knew that, but thanks for the confirmation ;)

The past couple of nights she has been sleeping in between her feedings, such a blessing because at first we were having a "party" from 1-5 am, and that was getting a little exhausting! She is definitely a snuggler and I'm looking into getting a good sling so I can have her with me at all times.
